Jill's Homemade Flour Tortillas (make these!)

If you've only ever eaten corn tortillas for most of your life or the store bought flour tortillas that really have no flavor or delicious texture, I invite you to drag out your rolling pin and give this little recipe a go. It's just big enough to where you'll get an awesome stack of tortillas and it's just small enough where you won't feel like you've got so many to roll out! Trust me when I say, "will work for food" and it's worth the experience!

I grew up in a family of truly amazing cooks. My mom's family is from New Mexico, and homemade flour tortillas were served with most meals where small pieces were torn off and used as a small "spoon" of sorts when simply folded to scoop up other delicious dishes such as homemade pinto beans, carne adovada, chili Colorado and the like. It makes eating so fun and interactive and when I see others eating these dishes, I want to rip up a tortilla and show them how to truly eat these foods on another level!

Now when rolling out your dough, DO NOT worry about the shape. Just be sure to roll them nice and uniform in thickness so they will cook evenly. The little blistered spots on the cooked dough are welcomed and if you like them a little darker, just raise the heat of your pan accordingly. You really can't mess this up! There's occasions that mine come out wonky in shape and it truly matters nothing. They all taste the same and you'll want to hustle to enjoy them with a nice hot meal!

My final suggestion to enjoy these, if even on their own is this. Always keep some room temperature softened salted butter on hand. It makes spreading so much easier and the flavor of that on these tortillas is just perfect. My other thought? You need a beautiful vessel of some sort of local honey to drizzle on the salted butter. It's epic and just delightful on their own if you don't wish to prepare these for a meal.

Finally, they freeze beautifully. Just wrap as airtight as you can and thaw at room temperature or warm gently in the microwave. It's going to be hard to go back to store bought after you chomp these beauties! So onto the recipe!

Ingredients:

  • 3 cups all purpose flour
  • 1 T. baking powder
  • 2 t. salt
  • ½ c. unsalted butter
  • 1 cup warm water

Instructions:

In a medium size bowl, mix the dry ingredients together. Melt the butter into the water, then add to the flour mixture.  Mix all the ingredients until the flour comes together and knead until the ingredients form a smooth ball of dough. Transfer to a floured surface and knead for three minutes. Cover the dough ball with plastic wrap and allow to rest for ten minutes.

Divide the dough into equal size 2 inch dough balls, roll each ball once again until they are nice and smooth. Return the balls back to a bowl and cover again with plastic wrap for another ten minutes to rest.  On a lightly floured, smooth working surface and using a rolling pin, roll out your first dough ball until you have a ten to twelve-inch round tortilla. Preheat your pan (cast-iron skillet works great, anything large enough to accommodate the size of the tortilla) on the stove-top over medium heat and place your tortilla onto the pan to start to cook. Once you see bubbles begin to form, flip the tortilla over and cook for an additional thirty seconds and then flip again to fully cook. Store the warm tortillas on a large plate, covered with a clean kitchen towel to keep warm while you finish cooking the rest of the tortillas. Enjoy!

Makes 10-12 tortillas
